Sweet Potato Cottage Pie

This is a more basic, quick and cleaner version of the traditional cottage pie - and it’s an absolute hit in our home! Best of all is that served with a nice big salad, it is a perfectly balanced lunch or dinner option!

  • 1 medium onion, finely chopped
  • 500g beef mince
  • 1 tsp mixed herbs
  • Salt and Pepper

  4. Add tomatoes, carrot and peas, and turn the heat down to allow the mixture to simmer for 15 minutes.
  5. In the mean time, boil the sweet potatoes in some water until soft, drain and remove from heat
  6. Lightly butter a medium casserole dish, add the mince and top with the sweet potato (top with cheese if you choose to)
