
This is a more basic, quick and cleaner version of the traditional cottage pie - and it’s an absolute hit in our home! Best of all is that served with a nice big salad, it is a perfectly balanced lunch or dinner option!
Ingredients
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 500g beef mince
- 1 tsp mixed herbs
- Salt and Pepper
- 1 tin of diced tomatoes
- 1 carrot, peeled and grated
- ½ cup frozen peas
- 600g sweet potato, peeled and cubed
- ½ cup cheddar cheese (optional extra)
Method
- Pre-heat oven to 180 C
- Heat olive oil in a pot, and sautee onions
- Add mince, herbs, salt and pepper, and allow to brown, around 5 minutes
- Add tomatoes, carrot and peas, and turn the heat down to allow the mixture to simmer for 15 minutes.
- In the mean time, boil the sweet potatoes in some water until soft, drain and remove from heat
- Lightly butter a medium casserole dish, add the mince and top with the sweet potato (top with cheese if you choose to)
- Place in oven and allow to cook for 30 minutes
