
Ingredients:
- 1.5-cup fresh brown lentils
- 1 stalk ginger
- 2tbsp olive oil
- 1tbso butter
- 1 tin chopped tomatoes
- 3 large tomatoes, chopped – remove pips
- 1 large onion
- 3 cloves garlic, grated
- 1 chili, chopped
- 2tsp ground cumin
- 2tsp mustard seeds
- 1ts cardamom pods
- Fresh coriander
Method:
- In a smaller pot add:
- 5 cups lentils
- 1 litre water
- 1 stalk ginger, peeled and chopped
- Boil the lentils until they are soft and then strain the water
- In a large pot add the following ingredients and allow to simmer for a few minutes (until the onions are soft):
- 2tbsp olive oil
- 1tbsp butter
- 1 large onion chopped
- 3 cloves garlic, grated
- 1 chili chopped
- 2tsp ground cumin
- 2tsp mustard seeds
- 1tbsp cardamom pods
- Now add the cooked lentils, the fresh tomatoes and the tin of chopped tomato
- Bring this mixture to the boil and the place it into your Wonderbag for 4 hours
- Serve on fresh basmati rice and top with fresh coriander
