
Ingredients:
- 1 can chickpeas, darined and rinsed
- 1 onion chopped
- 4 tbsp basil pesto – recipe below
- 8 large black mushrooms, washed and stalks removed
- Parmesan shavings
- 3tbsp olive oil
- Basil Pesto
- A lot of basil – like 4-5 handfuls
- 3 tbsp olive oil
- 2 cloves fresh garlic
- 2 tbsp pine nuts or cashew nuts
- 3 tbsp Parmesan shavings
- Blend all ingredients in your Nutribullet until smooth
Method:
- Set oven to 180°C
- Pop mushrooms into the oven for about 7 min to get them slightly soft, then remove them
- In a pan heat the olive oil, add onions, chickpeas and pesto and heat for about 10-15min
- Spoon the chickpeas into the mushrooms, top with parmesan and bake for 20 minutes
- Serve with roasted vegetables or roasted sweet potato wedges
- A dash of chili on the mushrooms before you serve them is recommended!
