Sensational Stuffed Mushrooms


  • 1 can chickpeas, darined and rinsed
  • 1 onion chopped
  • 4 tbsp basil pesto – recipe below
  • 8 large black mushrooms, washed and stalks removed
  • Parmesan shavings
  • 3tbsp olive oil
  • Basil Pesto
  • A lot of basil – like 4-5 handfuls
  • 3 tbsp olive oil
  • 2 cloves fresh garlic
  • 2 tbsp pine nuts or cashew nuts
  • 3 tbsp Parmesan shavings
  • Blend all ingredients in your Nutribullet until smooth


  1. Set oven to 180°C
  2. Pop mushrooms into the oven for about 7 min to get them slightly soft, then remove them
  3. In a pan heat the olive oil, add onions, chickpeas and pesto and heat for about 10-15min
  4. Spoon the chickpeas into the mushrooms, top with parmesan and bake for 20 minutes
  5. Serve with roasted vegetables or roasted sweet potato wedges
  6. A dash of chili on the mushrooms before you serve them is recommended!
