
This is a great alternative to (the often very pricy) seed loaves/crackers that are store bought. This recipe is easy, and the bread is tasty and filling - great for a snack, with soup or with a salad. Enjoy!
Ingredients:
- ½ cup flax seeds (also called linseeds)
- ¾ cup sesame seeds
- ¾ cup sunflower seeds
- ¾ cup pumpkin seeds
- 2 tbsp chia seeds
- ½ cup walnuts, crushed
- ¼ cup psyllium husk
- 2 tbsp olive oil
- 2 tbsp almond/coconut flour
- 2 tsp sea salt
- 4 large eggs
- ¼ cup water
- Heat oven to 160 C and grease a small loaf tin (I used coconut butter)
- Mix all the ingredients together in a mixing bowl, and let stand at room temperature for 15 minutes to allow seeds to absorb moisture
- Spoon the mixture into the loaf tin, and press it down so that it is evenly spread and compact
- Bake in oven for 60 minutes – stick toothpick/knife in to check that bread is dry on the inside.
- Remove, and allow to cool before slicing
